OUR STORY

My story began after my husband and daughter were both diagnosed with celiac disease. It was a huge shock for the family. I wanted to understand their situation so much: the why, the how, and to try to find a solution to see the light at the end of the tunnel. Over the years, I realized that they would no longer be able to enjoy the usual Lebanese and international feast. From that moment on, my gluten-free culinary experiments began, which pushed me to embark on this journey. My perseverance led me to learn more about the gluten-free culinary world and its techniques. Coming from a family with bold culinary talent, my innate passion for cooking helped me transform the dishes of old into gluten-free dishes to provide the texture, taste, and flavor sought by my husband and daughter. I wanted to share that same joy with my clients and the entire celiac community. Hence comes our reason for existence!
GLUTEN-FREE GASTRONOMY
Gastronomie Sans Gluten (GSG) is a sole proprietorship offering gluten-free dishes from the Middle East and internationally, unique in the gluten-free market.
GSG is one of the establishments Approved (formerly Certified and Dedicated) in Quebec by the PASG (Gluten-Free Food Program). Our products are vegan, gluten-free, soy-free, dairy-free, egg-free, shellfish-free, and peanut-free.
Its dishes, which are bursting with flavor, are proudly produced from my own kitchen, from my home to yours!

Trucs et astuces
Pour cuire, toujours utiliser le produit de l’état congelé. Voir ci-dessous pour chacun. Tout produit non consommé la même journée devra être mis au congélateur et non au réfrigérateur afin de préserver la bonne texture. Pour préchauffer Le pain Naan 25sec du congélateur et le pain pita 15sec, le kebbé meza 15 sec pour 2 unités. Les Pizza toutes sortes au micro-ondes, 2 unités pour 15sec. Pour le Spanakopitas et les entrées à la pâte phyllo, mieux préchauffer le four conventionnel au 200F, les placer pour 15mn pour avoir la texture croustillante. Pour les plats principaux, à préchauffer le four à 200F, placer le plat en aluminium à mi-couvert pour 15 min. Remuer une fois durant le réchaud pour que la température se répand uniformément.
Tips and tricks
Any product must be cooked from a frozen state. See below for each one. Leftovers to be kept in a freezer to keep the good texture. To Preheat Naan bread, 20 sec for Pita Bread, 15 sec Kebbé Mesa. For the Spanakopitas and the phyllo appetizers, the best is to preheat the oven at 200F, place them for 15mn to get the crispy texture. For the main dishes, use the oven. Same temperature as the phyllo appetizers. Duration of the plate may differ. Stir one time as it.s preheating.
Spanakopitas / Phyllo Fromage / Phyllo végé
Préchauffer le four à 450F, placer du papier aluminium sur une plaque allant au four, badigeonner le papier aluminium de l’huile végétal, placer les Spanakopitas congelés, badigeonner le dessus avec de l’huile de votre choix. Mettre au four au milieu pour 25 à 30mn ou jusqu’à la couleur désirée.
Preheat the oven at 450F, in a tray put aluminum foil, brush with an oil of your choice. Place the frozen Spnanakopitas and brush the top with oil. Cook in the middle of the rack for 25 to 30min or until golden.
Pain Pita ou Pain Naan / Garder toujours congeler pour préserver leur fraîcheur / Must be kept in a freezer for freshness
Retirer du congélateur à la température ambiante pour 15min. Chauffer un pain au micro-onde pour 10 à 15sec
Take it out from the freezer at room temperature for 15min. Heat one bread in a microwave from 10 to 15sec.
Rouleau Pçate Phyllo
Décongeler au frigo. Une fois retirée, couvrir d’une lingette humide tiède, dérouler tranquillement.
